Front-of-house: finishes that take the public
Out front you want a surface that still reads well after eighteen months of customers. Timber and timber-look finishes warm a room up, but they want sealing and a sensible position away from constant water. The bit people skip is the contact points. Counter returns, the customer-side lean line, the till zone, the front edge of the bar where forearms sit all night. That is where the knocks land, so that is where you spend on tougher edge profiles and harder finishes. Spreading the budget evenly across the whole front is wasted money. Gloss versus matte, and why it matters out front
High-gloss 2-pac photographs beautifully and shows every fingerprint and every scuff under raking light. Back-of-house: cleanability, heat and water first
Behind the pass the rules flip. Anywhere near the cookline, the dishwasher or wet prep, you need surfaces that take heat and standing water without breaking down. Stainless stays the default for prep benches and splashbacks: non-porous, takes the harsh cleaning chemicals a commercial kitchen runs through, copes with heat off the stove. For carcasses and doors in dry storage and general BOH, moisture-resistant board with a hard-wearing melamine or laminate face is the workhorse. It is cleanable, it is cheap to run, and you can swap one damaged panel instead of a whole run.
Most BOH joinery does not fail on the face, it fails on the edges and the core. Unsealed edges and standard particle board next to a dishwasher wick water, swell and trap grime. Spec sealed edges, moisture-resistant cores in the wet zones, and tight or coved junctions so residue has nowhere to sit. That one call kills most of the callbacks we see. When a melteca door swells, nine times out of ten it is a bottom edge that was never sealed properly, sitting under a leaking pot sink.
Get the legs and plinths right too. A toe-kick that sits straight on a wet floor is a sponge. Then there is ordering off an early drawing. Hospitality services move right up to the last minute, and joinery cut to a superseded layout either does not fit or gets force-fitted with silicone gap-fill that the environmental health officer flags on day one. Another regular is the toe-kick sitting flush to a wet floor with no way to clean under it, which fails verification and traps grime for the life of the lease. Run more than one venue, or fit out a multi-tenancy hospitality precinct, and this stops being a material choice and becomes a roll-out decision. A documented FOH/BOH spec means every site cleans the same way, every panel is replaceable off the same stock, and your turnover and maintenance costs are something you can forecast instead of cop site by site. It also protects the brand.
