Walk the newer streets of Flat Bush and in a good share of the houses the best kitchen isn't in the kitchen. It's two steps down, in what the plans call garage bay two: a wok burner, a stainless bench, a rangehood venting through the side wall, and a wall of drawers that smell like cumin when you open them. The showpiece kitchen upstairs — stone island, soft-close everything — hosts the coffee, the toast and the guests. That's not a failure. That's the design working exactly as intended.

This is the spec guide for that second room. Aucklanders call it a spice kitchen, a wok kitchen, a wet kitchen or just the other kitchen, and it turns up in garages, sculleries and the deep end of laundries right across the city. What follows is the kit, item by item, and the decision sitting inside each one. The job description comes before the room

Start with what the room is for, because every spec decision hangs off it. A spice kitchen takes the cooking that punishes an open-plan house: a wok on full noise, mustard seeds and curry leaves hitting hot oil, fish shallow-frying in a pan that spits to half a metre, a pressure cooker of dhal hissing away for an hour, a big-batch curry the night before a family function. That kind of cooking throws aerosolised oil, steam and serious aroma into the air, and in an open-plan room those settle into the sofa, the curtains and the school jackets by the door. The main kitchen keeps the coffee, the toast and the cooking that doesn't fight back. The spice kitchen, behind a door with its own extraction, takes everything that does.

The name undersells who uses one. The same room earns its keep for people who never temper a spice in their lives: preservers doing a weekend of passata and chutney, home brewers boiling wort, hunters breaking down an animal into mince and sausages, and the serious barbecue crowd with their brines, rubs and overnight cooks. The requirements are identical — high heat or big volumes, splatter, smell, oversized vessels, a proper washdown at the end — so the spec below holds even if your version never sees a cardamom pod.

Who's building them in Auckland

Auckland builds more of these rooms than anywhere else in the country, and it isn't hard to see why. In Flat Bush and Papatoetoe, South Asian households — often three generations under one roof — cook fresh twice a day, and the double garage is sitting right there. The cooktop: flame or field

Everything else in the room is joinery; the cooktop is the identity decision, and there are two honest candidates. A gas wok burner gives you a live flame that wraps a round-bottom carbon steel wok, visual control as the mustard seeds start to pop, and instant response when they do. It also pushes combustion heat and moisture into the room on top of what the cooking makes, needs the manufacturer's published clearances to anything that can burn or scorch, and it is licensed territory — reticulated gas or LPG bottles, the line has to be run and certified by a certifying gasfitter.

Induction answers most of gas's problems and creates its own. A high-output zone boils and sears astonishingly fast, dumps far less waste heat into a small room, and cleans up with one wipe of a flat surface. In exchange, the wok must be flat-bottomed and ferrous, a tiny tadka pan can sit below the hob's pan-detection threshold — many hobs won't recognise anything much under about 120mm — and the load means an electrician and, in most garages, a dedicated circuit back to the switchboard. Cooks who grew up with flame tend to grieve it for a fortnight, then stop noticing. Cooks who clean the kitchen tend to convert on day one.

Extraction: ducted out, or don't bother

This is the item that decides whether the room was worth building. The entire point of a spice kitchen is that the smell and the oil mist leave the building, and a recirculating rangehood cannot do that — it strains some grease, passes the air over a carbon filter, and returns the heat, the moisture and most of the aroma to the room. Every version of the complaint that the whole house still smells traces back to one. What you want is a hood sized to the burner, ducted to the outside through the shortest, straightest run available, with make-up air thought about — a well-sealed garage with the roller door down is a surprisingly good vacuum, and a hood can only push out what the room lets back in. Surfaces that take the abuse

The splashback's job is to be wiped, nightly, without ceremony. Toughened glass is the easiest surface in the room to clean — one pane, no joints, oil mist comes off with a spray and a cloth. Tile takes heat happily and works well too, but every grout line is a seam that holds grease, so keep the joints tight and the grout dark. Run the protection full height behind the burner and treat everywhere the mist can reach as splashback, not wall.

Benchtops earn their keep differently here than in the display kitchen, because the abuse is specific: pots straight off the burner, and turmeric, which stains almost anything porous a permanent yellow. A stainless steel insert at the cook zone is the professional answer — hot pot straight down, stain wiped off, and the scratches build into an even brushed patina rather than damage. Compact laminate is the workhorse for the rest of the run: dense black-core board, thin-edged, tough, indifferent to most spills. Engineered stone is a fair option as well, and to say it plainly, it is legal in New Zealand — Australia's ban did not cross the Tasman, and the local issue is dust control during fabrication, not the product on your bench. Storage: drawers, pull-outs and the 20kg bag

Cupboards fail this room; drawers run it. A kadai, a stockpot, a 10-litre pressure cooker and a steamer stack do not live politely on a shelf behind a hinged door — they live in deep pot drawers, where the whole drawer comes to you and the pot lifts straight out. Spec the runners for real weight, because these are the heaviest drawers in the house and the first thing to sag on cheap hardware.

Spices get their own rule: closed joinery, out of the light. Whole spices hold their volatile oils for months, ground spices fade in weeks, and both go faster warm and lit — open shelving beside a sunny window looks great on day one and smells like nothing by month six. Pull-out spice racks solve it: a slim vertical pull-out beside the cooktop, every jar label facing you, dark and cool the moment it closes. They're cheap relative to what they organise, and nobody who has cooked beside one goes back to loose jars in a cupboard.

Then there's bulk, which polite pantry design ignores. Rice arrives in 20kg bags, oil in tins, flour in 10kg sacks, onions by the sack in season. That needs floor-level capacity: a deep drawer rated for the weight, or an open bay at the bottom of a tall cabinet where the bag sits whole. Decanting into containers is tidier; a bay the bag actually fits is what still works by August. The sink, the carcass and the light

The sink is one big bowl, not two small ones. The test is a stockpot lying flat under a running tap, or a kadai getting scrubbed without clashing the tapware — a 1.5-bowl arrangement fails both, and the half bowl earns nothing in this room. Deep, single, stainless, hot water plumbed properly, because degreasing a wok in cold water is a punishment.

Two quiet specs stop the room ageing badly. First, moisture-resistant board for the carcasses: garages sit on cold slabs, laundries make their own humidity and sculleries trap steam, which makes this the dampest joinery environment in the house — standard board swells at the edges within a couple of winters, MR board with sealed edges doesn't, and adjustable feet keep the cabinetry off the concrete. Second, task lighting where the work is: a garage's single ceiling batten puts your own shadow across the wok, so run under-cabinet LEDs over the bench and a proper light at the cooktop. The room stops feeling like a garage the moment they switch on.

Garage, scullery or laundry end — and the consent question

The list doesn't change with the location; the surrounding spec does. A garage bay offers space and a short duct run through the side wall, but brings a cold slab, no lining and no plumbing. A scullery sits inside the thermal envelope with plumbing nearby, but the duct has to find its way out through the ceiling void. A laundry end already has water and a tub, but stacks washing-machine humidity on top of cooking steam, which makes the MR board and the extraction non-negotiable. The consent picture, briefly, because it's a whole article on its own: the joinery is not the trigger, the services are. A new sink with new water supply and drainage usually needs building consent, gasfitting must be done by a certifying gasfitter, and turning a garage into a space you cook in raises Building Code questions well beyond the kitchen — insulation, ventilation, moisture. Every spice kitchen handover goes the same way. Nobody mentions the doors or the colour. They turn the burner on full, hold a hand in the airflow, and grin when the smell goes outside instead of upstairs.

What goes wrong

The failures on these rooms repeat so reliably you can list them in advance, and nearly all of them get decided at ordering time by someone saving a small amount in exactly the wrong place.

  • The recirculating rangehood. The single most common regret. It was cheaper, it avoided a wall penetration, and the whole house still smells — the precise complaint the room was built to end. Ducted out is the room's reason to exist.
  • A bench too shallow to wok on. A standard 600mm bench with wall units above it leaves nowhere for the ladle, the lid or the landing plate beside a big pan. Push the cook run to 650–700mm deep, or keep the wall above the cooktop clear of cabinetry entirely.
  • No dedicated circuit. The induction hob, the rice cooker, the electric pressure cooker and the chest freezer all land on the garage's one existing circuit, and the board trips mid-dinner, every dinner. Get the electrician's opinion at design stage, not after handover.
  • Spices on open shelving by the window. Sunlight and warmth send spice oils rancid and fade ground spice to coloured dust, and open shelves near a wok wear a grease film within a month. Closed pull-outs, away from the light, every time.
  • Standard board on a garage slab. The bottom edges of the carcasses wick moisture off cold concrete and swell. Moisture-resistant board, sealed edges, and feet that keep the joinery off the slab.
  • A doorway with no door. If the room reads as part of the house, the aroma treats it that way. A door that closes is the containment; an opening is a corridor for the exact smell you built the room to trap.

What to ask before you sign

  • Is the rangehood ducted to the outside, and can you point at where it exits the building on the plan?
  • Gas or induction — and if gas, who is the certifying gasfitter, and is their work and certification inside the quote?
  • Is there a dedicated circuit for the cooktop, and what else will share the room's power?
  • How deep is the bench at the cook zone, and what's above it?
  • What's the benchtop at the hot zone, and has a sample survived the turmeric test?
  • Are the pot drawer runners rated for real weight, and are the spice pull-outs on the drawing or just labelled storage?
  • Where does the 20kg rice bag live? Point at it.
  • Is the carcass moisture-resistant board, and how are the edges sealed?
  • Does the new sink trigger building consent, and who is confirming that with council — you or me?
  • Is this one contract and one invoice, or am I coordinating joinery, benchtop, gasfitter and electrician myself?
