The car decides the layout before you do.
Drive through Flat Bush or Dannemora on a Saturday and count the sectional doors up with someone cooking behind them. The spice kitchen — wok kitchen, masala kitchen — has moved into the garage because that is where Auckland houses keep their spare room: a concrete box with internal access, power at the switchboard, and a show kitchen upstairs that stays clean while the pressure cooker works downstairs. One caveat before the tape measure. A garage is not a habitable room, a new sink and its drainage usually needs building consent, and the January 2026 exemption that lets you build a detached granny flat without consent does not cover converting a garage. The default: one straight run along the long external wall
Most garages give you two long walls: one shared with the house, one facing the boundary. Put the kitchen on the external one. The cooktop sits against cladding, so the duct goes straight out in a few hundred millimetres instead of crossing the ceiling; the plumber opens one wall and runs water and waste along one face to the gully trap usually sitting just outside the back corner. The lined house-side wall, full of services, stays closed. And a straight run never narrows the floor, so whatever the garage was doing before, it mostly keeps doing.

The car question, answered honestly
A single Auckland garage is around 3.0 metres wide inside — more in a newer Flat Bush build, less in an older Mt Roskill block garage. A bench is 600mm deep. Park a mid-size car, roughly 1.8 metres across before the mirrors, and about half a metre of clear floor is left: enough to sidle past, stand and stir. Not enough for two cooks and an open dishwasher. So the choice splits: keep the car and go compact — a 2.4 to 3.0 metre run, nothing on the opposite wall — or admit the garage is now a kitchen. Households that cook in it daily usually stop parking in it within the year. If so, plan for it now.
A double garage dissolves the argument: the kitchen takes one bay, the car keeps the other, and a 3.0 to 3.6 metre run fits along the free bay's walls. Zone the run: wok, landing, wash
Spice-kitchen cooking is high heat, hot oil, three pots at once, a pressure cooker counting whistles, and frying that upstairs would never forgive. What serves it is zones, in order. The wok zone wants about 900mm — the cooktop over two deep pot drawers, because the kadai, stockpot and pressure cookers should live under the heat they serve. Beside it, the landing bench: 600mm minimum, 900mm if the run allows, where every hot pot and drained colander touches down. Then a 900mm wash zone with one bowl deep enough to drown a stockpot, not two shallow bowls that fit neither.
Order matters as much as widths. Tall cupboard at the sectional-door end, where closed doors shrug off the dust. Then wash, landing, and the wok at the far end — clear of the draught when the door opens, hard against the back corner where the duct exit is shortest. A 3.6 metre run takes the lot: 900 wok, 900 landing, 900 wash, 600 tall, 300 for a pull-out spice unit.
Storage for how spice cooking actually works
Design the storage for the shopping, not for a magazine. Supplies arrive in bulk: rice and atta in 20 kg bags, oil in four-litre tins, onions by the sack from Hunters Corner or Stoddard Road. A 600mm tall cupboard swallows it all, on a weight-rated floor rather than a clip-in shelf. Spices want a 150 to 300mm pull-out beside the cooktop — beside, not above, because jars in an overhead over the wok slowly cook themselves. Two more residents need a drawn home. The chest freezer — a spice kitchen and a chest freezer are a package deal — gets its own bay on the opposite wall or at the dust end, never in front of the bench. And in multigenerational households on the Shore, where the garage kitchen is the busiest room in the house, leave floor for two cooks.
Extraction is a layout decision, not an appliance choice
The rangehood you buy matters less than the wall you put it on. Against the external wall, the duct punches straight through the cladding and the hood delivers close to its rated extraction. Against the internal wall, it crosses the whole ceiling with an elbow at each end, and every metre and bend taxes the airflow — same machine, visibly worse, exactly where the cooking is smokiest. Give the air a way in as well as out. An unlined garage leaks enough around the sectional door to feed a rangehood; a properly sealed conversion — new seals, lined walls, fitted internal door — can be tight enough that the hood starves and smoke drifts upstairs. Plan a makeup-air path: a window you actually open, a vent, a louvre. Cheap on the drawing, ugly retrofitted.
Half the garage kitchens we measure have the hob drawn on the house-side wall because that is where the sink went. Move it to the outside wall and the duct drops from a ceiling full of elbows to one straight punch through the cladding — same rangehood, twice the result.

Garage realities the drawing ignores
A garage is the most honest room in the house: uninsulated slab, bare walls, one light, weather under the door. The slab is cold underfoot in July and wicks moisture in a wet winter — hard on melteca kick panels, harder on anyone at the bench in socks. A decent mat fixes the second problem; sealed, scribed plinths the first. Damp is the same quiet enemy we cover in putting the kitchen and laundry in the same room — and since the laundry is often already out there, that may be your exact situation. The rest, plainly:
- The sectional-door end is the dust end: grit and leaves blow in under the seal. Keep open shelving away from it and let closed tall doors take that corner.
- The lighting is one bare batten that puts your shadow on the bench. LED battens over the run plus under-cabinet task lighting is the job's cheapest upgrade.
- Induction wants a dedicated circuit. The switchboard is usually on the garage wall, so the run is short — but have an electrician confirm capacity early.
- Condensation on an uninsulated door drips somewhere. Keep the atta and anything electrical away from under it.
- Hot water has to come from somewhere too: a long insulated run from the cylinder, or a point-of-use unit near the sink. Decide at design, not on install day.
What goes wrong
The failures repeat reliably enough to list from memory; each one looked small on the drawing.
- The cooktop lands on the internal wall because that is where the sink went; the duct crosses the ceiling in elbows and the hood moves half its rated air.
- The conversion is sealed properly and nobody plans makeup air. The rangehood starves, and the tadka smell arrives upstairs in the kitchen the project existed to protect.
- The chest freezer arrives after the install and parks in front of the landing bench, because the drawing never gave it a bay.
- Nobody prices the hot water run until the plumber walks the job and finds the cylinder at the far end of the house.
- Open shelving goes in at the door end because it photographed well; within a month everything on it wears fine grey dust.
- Cabinets are set out without measuring the slab's fall, and by the back corner the plinth is scribing 40mm.
